Reorder or rename fields in Strategy sections

I realise this is all possible, but it's not in the documentation, so I'll change this to, document the above, please. :-)

Was: Some of the fields are irrelevant to our business. In other words, our competitors are products rather than companies, so we need things like "Total players" as opposed to "Employees".
