Allow read-only date fields to not be modified through gantt or roadmap views

We’re using a custom field layout to lock date fields once a record (for example, an Initiative) reaches a certain status. The goal is to prevent Aha! users from modifying these dates beyond a specific point in the workflow.

However, we’ve noticed that when those records are displayed on a Gantt-style view, users can still change the start and end dates by dragging the bars directly.

We're locking fields to prevent users modifing the dates in the UI. However locked fields only lock the fields in the record drawer.

Provide an option to lock down fields from any user interaction (even if it's still updatable from other pathways such as an integration or CSV import)
