While ticket creation dates can be used to establish the age of a ticket, they are not straightforward to use in filtering and sorting, and highlighting ageing and aged tickets according to rules in a visual display (a board for example) is not possible.

A calculated age (at its most basic, days since creation) would unlock a range of ways to monitor and display tickets.
