Toggle "Track History" Merged

On a roadmap, inevitably, schedules will change and slip.  The feature I am looking for is when creating a Custom Field, I would like to be able to toggle a "Track History/Changes".  The example I have is this (In the context of dates):

Let’s say on May 1st a product is supposed to be shipped to USA for review. Then, we are informed that it’ll actually get here on May 5th. Then sometime happens at customs and it is delayed till May 9th. When I do a post-project review, I'd like to see how the dates have shifted during the course of a project.

Note: This probably has uses across multiple fields; date was the most convenient one for me.
