Can we map the value field to an existing account field for cases? Value is automatically pulling from the opportunity and we actually have MRR at the account level and it would be great if we could map that for cases.

All custom fields should allow clearing the value

If you create a custom field, then select a value by mistake, or want to clear it, you cannot.
